I went through some horrific years of having to eat a highly specialized diet due to some chronic health issues from which I was suffering. One of the torturous parts of this diet was that I wasn't allowed to eat onion or garlic (among other things). This felt like a death sentence to someone who is not only a foodie, but someone who really enjoys cooking.
This posed a challenge on so many levels. However, I persevered and was still able to make delicious recipes creatively. This marinade is one of them. I found a version on Pinterest which has since been taken down, but here is the basic recipe that produces the most tender, juicy, flavorful chicken you have ever had. Everyone I have served it to always raves and asks about it.
So, without further ado, I give you the best-chicken-marinade ever:
1 cup oil (I use avocado)
1/3 cup soy sauce
1/4 cup lemon juice
A couple tbsp of Worcestershire sauce
A heaping tbsp of mustard powder
Pepper
Dried Parsley
We have marinated 11-12 breasts at a time (split between two 1-gallon bags) and could have done more with the above amounts listed.
